Many pound cake recipes have sour cream listed in its recipes – I was wondering why sour cream & not other types of creams. What does it do to the cake? Does it give tangy flavour? Does it chemically change the cake somehow?

I am wanting to make Pepperming fudge for our holiday get-together. I found two recipes for it, but since I have not made fudge before I don’t know which will be best. They are both the same (sugar, evaporated milk,butter,marshmallow creme, vanilla milk morsels) except one calls for 1/2 cup crushed peppermint candy and the other calls for 1/4 cup, but then adds 1 teaspoon vanilla and 1/4 teaspoon peppermint extract.
