What are some good crock pot recipes that take a long time to cook?

I lived in the dorms last year, so the food I had came from a cafeteria below my dorm.
This year, since I’ll be living in an apartment, and I’ll be making my own food.
What are some good, relatively inexpensive, at least semi-healthy recipes that I could make as a college student? I’m looking for things beyond mac n cheese. :)
